STALE BREAD PIZZA

Ingredients for a single serving:

2 slices stale bread (2 ounces) crust removed

1 ounces leftover cheese, diced or coarsely grated

1 ounce leftover meat, poultry or cold cuts, diced

1/4 cup diced canned tomatoes or cooked vegetable

2 tablespoons Italian parsley, minced

1 tablespoon olive oil

1 clove garlic, diced

 

Preheat the oven to 500 degrees.  Place a pizza stone or rack in the middle of the oven.

Soak the bread in 1/2 cup water.  Squeeze out the water after soaking for a crisp pizza or pour off excess water and simply mash the bread for a pudding-like consistency.

Mix the remaining ingredients with the wet bread and form into a ball.  Place the ball on a sheet of parchment.  Flatten the ball into a flat 6" disk.

Bake for 10 - 12 minutes until lightly browned.
