CHESTNUT PUREE
Ingredients:
1 pound can of whole chestnuts in water
game stock or chicken broth
1/4 cup creme fraiche
kosher salt and pepper
Directions:
Puree the chestnuts in a blender or processor with liquid from the can. Heat puree to a simmer in a saucepan using stock or broth to thin as desired. Fold in cream, season to taste. Reheat on the range or place in a casserole and microwave.
